Bringing this over from an old blog to show just how simple and delightful home-made cakes can be.
These started with a simple Victoria Sponge recipe and I added tonnes of chocolate, sweets, buttons, time and love and they will be delighted.

Sometimes I want to scream, cry and cave in. A beat-candida diet coupled with gluten and dairy free is HARD GOING at times.
I had a moment with a chocolate bar this week that nearly got me, but a quick slam shut of the cupboard door and cup of spicy tea with a biscotti saved me.
For me, having something yummy, but diet appropriate, around really helps. A wee treat to turn to when others are indulging in the sugar laden western diet world.

It’s an interesting perception that if it’s gluten or dairy free it’s healthier for us.
Hm…….. I’m not convinced. Have you seen the lists of ingredients on the processed packaged stuff on offer in our supermarkets, it’s alarming. I can’t even pronounce some of it far less know what it is.

Thanks to my CFS/ME I’ve been learning just how important it is to keep our blood sugars balanced.
Feeding our children cereal, toast ( especially white bread) with jam, chocolate spread or marmalade or any other so-called breakfast option is doing them a disservice.

Surely one of the simplest ideas alive. Mix up flour and water, mother nature supplies some natural yeast and off you go.
